Although the title for was to have been "Zombies", "Zombie" or "Invasion of the Zombies", director Del Tenney used "Caribbean Adventure" as a working title because he didn't want the Key Biscayne residents to know he was making a horror film. At one time "Voodoo Blood Bath" was considered.
Originally filmed in 1964, this film sat on the shelf unreleased for six years until is was picked up by distributor Jerry Gross (of Cinemation Industries), who needed a horror film to play on the bottom of a double bill with his in-house production I Drink Your Blood (1971). The title was changed to "I Eat Your Skin" (1970).
At the time of shooting Key Biscayne was considered largely jungle, and many cast and crew members came down with health problems during production. In addition, in the scene where William Joyce rescues Heather Hewitt from a bay inlet, four of the largest sharks in the area were seen in the bay. Director Del Tenney says he never did tell the actors.
The trailer for the "I Drink Your Blood/ I Eat Your Skin" double feature does not have any footage from "I Eat Your Skin", as it was in black and white. Some audiences felt "swindled" by this.
